These are not two versions of the same thing. Rawhide begins as animal hide, the raw material that moves through the leather supply chain. A yak chew is a hard cheese, dried until it is dense enough to keep a dog busy for hours. Which one suits yours comes down to the dog in front of you: how hard they chew, how big they are, and how closely you can watch them.
What rawhide actually is
Rawhide is made from animal hide, specifically the inner layer of a cow or horse hide. The outer layer of that same hide becomes leather.
Sources describe its origin differently. Some trace hides to slaughterhouse floors; others call rawhide a byproduct of leather tanning rather than meat processing. We are not going to pretend that is settled. The accurate way to put it is that rawhide starts as animal hide entering the leather supply chain. Most of it is manufactured overseas, primarily in China.
What a yak chew actually is
A yak chew is a Himalayan-style hard cheese dog chew, made with simple ingredients and containing no rawhide.
The category has a name: chhurpi, a traditional hard cheese of the Eastern Himalayas. Hard chhurpi sits among the densest cheeses by texture, with moisture below 15 percent, which is why the chew is firm and slow to work through. The drying does it, not an additive.

How each one is made
The rawhide process
Hides are brined in salt, treated with lime to help separate fat from skin, cleared of hair by chemical and physical means, rinsed, then shaped. Thickness varies, and thicker rawhide takes a dog longer to get through.
The Himalayan cheesemaking process
This style of cheese is traditionally curdled with an acid rather than animal rennet, using soured whey, buttermilk, or a plant acid. It is then pressed with stone weights, wooden presses, or by hand, and dried for anywhere from several days to several months.
That is the regional tradition, not a description of any one workshop. What we can tell you about ours is that it is handcrafted by a family-run producer in the Himalayan region of Nepal, which is why no two pieces come out identical.
How long each one lasts

Those ranges are wide on purpose. A determined chewer and a thoughtful nibbler can land at opposite ends of the same band.
We will not give you a matching number for rawhide, because no comparable figure is measured the same way. Rawhide duration varies with thickness and with the dog, and anyone publishing a tidy head-to-head on it is guessing.
Hardness, texture, and your dog's chewing style

What happens when the chew gets small
This is the part most comparisons skip, and it matters more than the rest. Take the chew away and discard it once it is small enough to fit entirely in your dog's mouth. A hard chew is a supervised activity, whichever category you buy. Stay in the room. Match the size to your dog's weight rather than their attitude. Keep fresh water available, since dense chews can be thirst-inducing. In a multi-dog household, separate the dogs and give each one their own chew. And a chew is a treat, not a meal, so it is not intended to replace a complete and balanced diet. If your dog has dental issues or dietary sensitivities, talk to your veterinarian first.
